I love jacket potatoes, I eat them several times a week (my fave filling is tuna mayo!). I love them with a crispy skin but I always forget to put them in the oven, so I usually end up blasting them in the microwave – they never taste the same this way though do they?

That was until I learnt you could put them in the slow cooker! Holy Moly GAMECHANGER! For some reason they just taste better. AND their skin is crispier (but not too crispy that you break your teeth – as can sometimes happen when the skins go too crispy in the oven.

You’ll need:
  • As many jacket potatoes as you want to eat (medium i.e. can fit in the palm of your hand)
  • Olive oil
  • Salt and pepper
Let’s Cook!
  1. Rub the potatoes with the oil and rub in the salt and pepper
  2. Prick the potatoes
  3. Cook on high for 3/4 hours or until cooked through – timings will depend on your slow cooker so keep an eye on them the first time you cook them.
